Roasted Lamb with Balsamic
+ Mustard Marinade.

Ingredients:
  • 2 Racks of Casa Ceccatelli lamb (Frenched)
  • 1 ½ tbsp Casa Ceccatelli Organic Sale Aromatico
  • 3 Garlic cloves
  • 2 Tbsp of minced fresh rosemary
  • ½ Cup of Dijon mustard
  • 1 Tbsp Casa Ceccatelli Organic Aceto Balsamico di Modena
Preparation:
  • Using a food processor, mince the salt, garlic, and rosemary as finely as possible.

  • Add the mustard and aged balsamic: blend in food processor for 1 minute.

  • Place the lamb in a roasting pan with the ribs curving downwards.

  • Coat the tops of the lamb with the balsamic mixture. Let stand at room temperature for 1 hour.

  • Roast lamb at 450°F for 20 minutes (rare) or 25 minutes (medium-rare).

  • Remove from the oven after allotted time, cover with foil, and let stand for 15 minutes before serving.
