Carefully aged no more than six months, it is delightfully soft to bite into and has a fresh local-herb scent and pleasingly-mild taste. One of the oldest cheeses in Italy and a known favorite among ancient Romans, pecorino is a delicacy for any lover of fine foods and world-class cheeses.

Our delicately-aged pecorino is best enjoyed in a classic cacio e pepe or l’amatriciana pasta, as well as a meat or vegetarian eggplant involtini. Pair with white or rosato, and buon appetito!
