Delicately scented, with hints of summer grass and soft butter, our fresh pecorino is sweet, airy, and wonderfully soft to bite into. Aged for no less than 20 days, it boasts a soft yet solid consistency and a thin, smooth yellowed crust. The warm, creamy yellow color has a distinct sponge-like appearance, with irregular holes not unlike asiago distributed throughout the main body.
Our secret: enjoy it in a light charcuterie alongside our Mostarda Chiantigiana di Peperoni and flavored salami, with sides of fresh figs and Tuscan bread.
